Frederick Wiseman’s (National Gallery, City Hall) 44th documentary takes us to Central France for a behind-the-scenes view of one of the world’s most coveted restaurants: La Maison Troisgros. Founded 93 years ago, Troisgros has held three Michelin stars for 55 years over four generations. Wiseman, in his signature style, captures the fervid discussions about flavors, textures, presentation, sustainability, and kitchen etiquette among the staff and Troisgros family as head chef and father, Michel, transfers the leadership in the kitchen to his son, Ce´sar.
Wiseman spent seven weeks at Troisgros capturing the great artistry, ingenuity, imagination, and hard work of the restaurant staff in creating, preparing, and presenting meals of the highest quality. From purchasing fresh vegetables at the market, to touring a massive cheese cave, to designing a dish with a perfect balance in taste and appearance, Wiseman chronicles the fascinating details of the day-to-day operation of one of the world’s finest restaurants as it experiments with the evolution of haute cuisine.
